Instant Pot Black Bean Soup

I am so not in a season of inventive or in-depth recipes. I am usually cooking with one hand while holding a small person at the end of a long day. Meals I can rough chop, throw in, and are warm and nourishing win the day. Bonus if my toddler can eat it with a spoon.

*All recipes should be adjusted to your taste and your family.

1 onion, roughly chopped

2-3 cloves of garlic

1 tsp chili powder

1 tsp ground cumin

salt, to taste

4 c veggie broth

1 1/2 cups dried black beans

1 c + spinach or kale (thick stem removed)

Optional toppings:

jalenpenos

chives

cilantro

pepitas

hot sauce

  1. add olive oil to bottom of instant pot and saute onion and garlic for 2 min.

  2. add chili powder & cumin

  3. add broth and beans set timer according to your black bean settings

  4. Take 1/2 to all of the ingredients once cooked and use a blender or immersion blender. Throw in 1-2 cups of kale or spinach into the hot soup that you are blending. Blend to the desired consistency. This is a great way to get your greens in without really tasting them and in small enough pieces that your kids can’t pick them out.

  • I like to throw everything in and then set the timer to start an hour before dinner so it is all ready to go.

  • You could have a side of brown rice or quinoa as well to throw this black bean yuminess on top of.
